Welcome to the first issue of “Cheese Wizz”, the official newsletter, gossip rag and shameless marketing tool for flamingcheese records!  The purpose of this monthly communication is five-fold;

  • to entertain

  • to spread (no pun intended with the Cheese Wizz) love and joy

  • to keep you up to date with all the latest flamingcheese gossip including tour dates and events

  • to shamelessly promote our fine flamingcheese products and wait for it ----

  • to include with each issue will include a fantastic cheese based recipe that has been fully tested in our flamingcheese test kitchen!

What more could you ask for???  (FREE CD’s, yeah I know!) – keep reading, we’ll get there eventually!!!!  Ask yourself, “Self! What other record label cares about me enough to send a tasty recipe every month?”  Answer:  None!  They are too busy focusing on making the big bucks, while we here in the land of cheese believe that if we provide quality entertainment for a fair price, and bribe our friends and customers with FREE cheese recipes, we will be able to stay in business and keep on releasing great music!

Each month we will try to keep Cheese Wizz brief. We know you have other important things to do, and we do appreciate your taking the time to read these ramblings.  Each following issue will include a short feature article as well as our artists tour dates and up dates (gossip too!) as well as our cheesy recipe.  Please send suggestions, cheese recipes and humorous banter to: the Wizz.  You can subscribe or unsubscribe to the same address by putting the appropriate word in the subject line.

Mighty Revelators
The MIGHTY REVELATORS are a high energy gospel quartet from Los Angeles CA.  The group was formed in 1964 and is still going strong.  They are one of the most popular acts on the HOUSE OF BLUES  - GOSPEL BRUNCH circuit. 
Loco Zydeco
LOCO ZYDECO is Canada’s # 1 Zydeco party band!  They blend traditional Zydeco music with a bit of Canadiana.  LZ as they are known have developed a large fan base in Canada as well and have garnered the respect of Zydeco legend Terrance Simien.
Cheryl Lescom
CHERYL LESCOM has been on the Canadian music scene for more than 30 years.  She has worked with Ronnie Hawkins, Long John Baldry, Dutch Mason, Downchild and Jeff Healy over the years.  In 2006 she recorded her comeback CD produced by Juno Award winner Jack de Keyzer.
Someday Baby
SOMEDAY BABY hail from Budapest Hungary.  Although you may not expect that 3 guys from Hungary would know anything about traditional blues music, you will be surprised when you hear their authentic sound.  The band consists of a structural engineer / drummer, the winner of Hungarian Pop Idol / singer and dobro player and a classically trained musician and recording engineer who also plays blues tuba!!!
Shawn Kellerman
SHAWN KELLERMAN is one of the best guitarists on the blues scene today!  He served his apprenticeship on the ‘chitlin  circuit’ before touring with blues legend Bobby Rush.  Shawn blends many original sounds into his own blues style, making him a unique talent to watch in the years to come!

recipe of the month - SAGANAKI (Flaming Cheese)

Each month we will feature a tasty cheese based recipe. Please feel free to email your favourite cheesy recipe to the Wizz!  Since this is the inaugural issue of Cheese Wizz, we think it only fitting that we start out with a recipe for the dish that gave the label it’s name – flamingcheese.  Known by it’s proper name - Saganaki is a traditional Greek dish that is a favorite all over the world.  It is normally made with Kefalograviera or Kasseri cheese, but can also be made from any dense goat milk cheese.

Ingredients

1 lb. of Kefalograviera or Kasseri cheese
Cornstach
Butter
Ouzo or Brandy (warmed)
Fresh Lemon wedges
Baguette or pita
Kalamata olives (optional)

Cut cheese (hey, I smelled that!!!!) into ½  inch slices.  Rinse slices under cold water.  Shake off water and dredge the cheese in the cornstarch until lightly coated.  Place the cheese on wax paper and put in freezer for 30 minutes.

When ready to serve – remove cheese from the freezer.  Preheat a cast iron pan or plate over medium high heat.  Add 2 tablespoons of butter to the pan.  When the butter is melted just before it starts smoking – (The Surgeon General reminds you that smoking is bad for your health and may cause cancer, heart failure, ashtray month and extreme poverty. This has been a public service announcement from your friends at flamingcheese.) fry the cheese until lightly browned. 

Remove the pan from heat.  At table side pour Ouzo or Brandy over the cheese and light the alcohol on fire while screaming “Opa!!!”  Squeeze a wedge of fresh lemon over the flames, and serve immediately (best right from the cast iron pan or plate) with fresh slices of baguette or pita pieces and fresh Kalamata olives. 

Eat, drink and be merry (that's merry, NOT Mary - sex changes for males are not required to enjoy this dish).

Eat responsibly.
